Vineyard notes
In 2003 we began experimenting with the idea of producing a Super Tuscan style of wine, composed mainly of Sangiovese but moderated with two French varietals, Cabernet Sauvignon and Merlot. We had been making Sangiovese for several years from the Fox Hill vineyard located between Ukian and Hopland in Mendocino County. This vineyard is owned by Lowell Stone who has concentrated his efforts in growing only Italian and Portugese varietals. Normally, we produce wines from individual vineyards and place the vineyard owners name on the label. In this case, since Fox Hill does not produce other varietals, we added cab from Elizabeth Vineyard in Redwood Valley and some Merlot from the Sea Bisquit Ranch, also in Mendocino County.
Production notes
Our design in producing il montaggio is create a wine where the fruit-forward Sangiovese is muted by the structural component of Cabernet Sauvignon. The Merlot is added to balance the blend. While we originally made each varietal separately, our experience has indicated that optimum results were obtained with about 65% Sangiovese, with more cabernet than merlot for the remaining. Thus, we currently make the blend soon after the harvest to let the wines begin their association early on. We restrain the use of new oak, although all the wine is aged in small oak cooperage.
