Fieldbrook Winery
2006 Piccola,  Mendocino County Fox Hill Vineyard

Vineyard notes:

Established over 50 years ago and devoted exclusively to Italian varietals,  Fox Hill Vineyard is located on the East side of the Ukiah Basin. "Piccola" is a wine blended from grapes indigenous to northern Italy.

Production notes:

The grapes were picked at daybreak and were still cold after transport to the winery. They were destemmed, not crushed, and pressed lightly for two cycles. The juice was then chilled for two days, racked off the sediment, inoculated and fermented in stainless at 12oC. A slight tartaric acid adjustment corrected the pH and total acidity. Fermentation lasted about four weeks. After racking off the lees, the wine remained in a stainless steel tank until bottling..

Winemaker notes:

Delicate aromas of honeysuckle and lilac. The wine was "finished" at 0.5% residual sugar, just above the threshold of "sweetness."
